1. I was a cooking machine on Tuesday, y'all. Le Husband has been on the road the past few nights, which is a bummer cause I miss my best friend, but it does give me free range in the kitchen. He and I are about 95% the same regarding what we like to eat and cook, but that 5% usually gets in our way when we are both prepping for the week. I prepped three new recipes [blog posts to come] and made kale/sweet potato chips, go me. I also made more Cracklin Chicken, steak for lunch salads and a delicious fruit salsa. Just call me Cooking Cathy. Here are a few previews to get you drooling ;)!
2. I'm a few weeks behind on the Good Wife and oh my goodness I'm finally caught up. Le Husband doesn't watch this show so I try to catch up on episodes when he's out of the house. Can I get an AMEN to the first episode this spring? #THANKFREAKINGGOODNESS!!! To be honest, I wasn't sure where the show was going to go after Will and with Alica running for state's attorney. The writers have done and INCREDIBLE job keeping things fresh, interesting and of course drama filled. I'm nervous for Kalinda this season, is anyone else?

4. Spring is so close and I'm so excited. I went for my first spring training run on Tuesday and it was amazing. There was quite a bit of wind which made turning a corner tricky, but the temperature was fantastic for a March run. Le Husband isn't a big runner so I try to sneak in runs when he's out of town because I really enjoy our gym dates. But, if I want to reach my fitness challenge I'm going to have to start running more on my own #noexcuses.
5. Now that I'm running again, I'm trying to be really careful to not over work myself. I've dealt with so many annoying injuries in the past few years and I think a lot of it ties back to doing too much and not taking care of my body. Since Le Husband's been gone I've tried to incorporate stretching at night while watching TV or right before bed. I know I can do this when he's home, but it's so much more fun cuddling on the couch while we watch our shows together than sitting on the floor trying to do the splits. I'm also planning to reincorporate morning yoga twice a week to give my body some extra stretch time. Two days down and so far I'm feeling great.
6. The first day of spring is tomorrow and they are calling for snow in my area. Are you kidding me?!!? No, Olaf, I do NOT want to build a snowman! I'll catch you next year, okay?

I totally eat like a kid when my husband is away!! But I also have a lot of girly time like you with painting nails and dancing around!! Ode to single days lol! xo, Biana - BlovedBoston
ReplyDeleteMan, that food looks so good! Sounds like you've been super productive and have added in some fun in the mix too. Can't wait for those recipes xo
ReplyDeleteI wish I could reach my toes to pamper myself! Boo snow, sending you warm wishes.
ReplyDeleteOMG I eat everything I shouldn't when my husband is gone. Last weekend I went to town on a meat and cheese platter and pizza! I can't believe it's supposed to snow tomorrow, wtf?! I hope it warms up there for you soon girl!

is that mango chutney? because if so, SHARE THE RECIPE PLEASE!! it's been nice here weather-wise as well; not as nice to head out running in shorts but i think the trails are finally thawing out! i'll be checking those out soon enough.
ReplyDeleteYou know I love my alone time, too!! And YES to the Good Wife! I was just thinking this past week that I'm so thankful this show is just as good as when Will was on it. Now to see if Alicia will win?!?
ReplyDeleteYou totally deserve pampering & eating that 5% you don't agree on!
ReplyDeleteGoodness that food looks amazing! But boo for snow! Hope spring finds it to your neck of the woods soon!
ReplyDeleteWhenever Mark is gone I'm either a cooking machine or I drink wine and eat crackers......it's a total tossup. However I want that top recipe it looks amazing!!!!
ReplyDeleteThe only good part of having Eric gone is catching up on all my girly shows once Mia goes down for the night, ha ha!
ReplyDeleteOh that mango avocado salsa looks DELISH! Yum!
Yay for your first run outside! The weather is such a tease to you though, it sounds like! It's gonna be too hot for me to continue running outside before I know it. Bleh!
When hubby is away, its time for me to be lazy! I don't get to be lazy when he's around, he's the lazy one and I have to keep up on stuff so when he's gone, I take my time and do whatever whenever (like now, should be moving already but I'm readying blogs, ha!)
ReplyDeleteStopping by from Stuff -n- things :)
It's definitely good that you are not overworking yourself when it comes to running. It's crazy how quickly an injury can sneak up on you.
ReplyDeleteWay to go girl on all that food prep! I primp when the husband is out too. They just don't understand that it takes time to look as good as we do. ;)
ReplyDeleteHopefully there won't really be any snow tomorrow! It sounds like such a great few days of "me" time-- everything you looked looks so good/fancy! I love those fun bright nail polishes! What is in the Essie bottle? Is it a top coat?
ReplyDeleteYou need alone time! So important and I'm so impressed with all the cooking you did! I would totally be the one to head straight for take out! =) And I'm with you on the weather getting better so we can get outside and run. My favorite thing to do for sure
ReplyDeleteFree time?! What's that? I want it! Ha! Looks like you took full advantage! YAY!
ReplyDeleteI get my house clean when my hubs is away!!! No one to walk behind me & mess it up
ReplyDeletemore snow?! NO. that sucks!!
ReplyDeletethose mushroom thingys look ahhhmazing.
i make KC stretch with me if he's home haha. love my morning yoga too!
Alone time is a definite plus!! You got all the right things planned!!!
ReplyDeleteI love making special meals that I like when the husband’s out! Catching up on TV is the best!! I feel like he’s always distracting me and I love getting in “my” shows! Pampering – yes, working out – yes.. sounds like the best kind of alone time.. I love me some time to myself!
ReplyDeleteWell Mrs. Cooking Cathy - can you come over to my house and make dinner tonight?! Because Ive been so lazy lately!
ReplyDeleteEmptying the DVR is the first thing I do when my husband's away. I get to bingewatch my guilty pleasures :-D
ReplyDeleteI can't believe you're going to get another storm!! I swear that spring will be there soon! When my husband is away, I cook anything and everything that's ranch or buffalo-flavored (he hates those haha).
ReplyDeleteOh man, I'm coming over next time he's gone haha. Hello stuffed mushrooms! Me time is the best sometimes ;)
ReplyDeleteMmm that looks good! I eat horribly when the husband is away, we are talking about toast for dinner. I am getting better but I just get lazy about cooking for one lol!
ReplyDeleteI need a pedicure like woah! I can't reach my toes (comfortably) anymore so some pampering is definitely in order:) Loving that you fit so much in while hubby was away!
ReplyDeleteObsessed with The Good Wife! I was worried it would get boring too after (you know), but it's so good!
ReplyDeleteI'm definitely one to crank up the music and sing with a hairbrush too! Its nice you've been able to start spring training...the weather has been so nice lately! Its supposed to snow/rain/be cold here at JMU tomorrow too and I'm refusing to believe it. I just want consistently warm weather!
ReplyDeleteI would definitely cook whatever I wanted and probably veg on TV I never watch. And for sure I would spend each morning reading in total silence with my coffee for hours
ReplyDeleteQuite honestly, the last time I didn't have anyone in the house for more than an hour or two is about 8 years ago. At the moment, all I would do if I even had an afternoon to myself, is read and sleep :-)
ReplyDeleteThe foam roller is such a devilish fiend. I hate how much I love it.
ReplyDeleteGo you for cooking up a storm while he's away and not buying takeout - I feel like thats what I'd do hahah. Everything looked delish!
