Recipes To Try This Month

We survived Snow Storm Jonas, y'all. I'm finally back at work -- although schools are still out, possibly until Friday -- and while the roads aren't normal they are safe enough to navigate to work [drat].  I totally enjoyed my snowed in weekend with all the treats and down time, but my body is not happy with me right now.

So it's time to get back on track with workouts and healthy eats. Obviously I'll be turning to my tried and true clean eats, but I thought new year, new recipes too. Cue Pinterest and blogs for inspiration.

Paleo Squash Ravioli: This recipe is probably the most involved, but it is also the most intriguing. I'm a huge ravioli fan but find when I ate more than three pieces I can feel it in my body before dinner is done. I'd love to enjoy the taste of ravioli without the after effects. Fingers crossed my mandolin can slice thin enough.

Cauliflower Fried Rice: First we had cauliflower pizza crust and now we have cauliflower rice. I was not a fan of the pizza crust, so I am a bit wary of the rice. Is this something people rave about because everyone is raving? Or does cauliflower rice really work? We eat a lot of cauliflower with our meals so I'm trying to find something new this month.

Avocado Chicken Salad: If you've read for awhile you've realized I'm not really a sandwich person after Whole30. So, I'd add this to chicken to a salad or just eat it on it's own or on cucumber pieces.

Sweet potato & Zucchini fritters: These sound perfect for a side dish with protein [I'm gonna take out the butter] and looks quite easy peasy with prep. I bet they would be a great addition to any breakfast routine too.

Cauliflower Tater Tots: Non guilty tater tots? Yes please! The recipe calls for butter and bread crumbs which I'll probably cut in half but the rest of the ingredients makes my Whole30 heart smile. I'm not a huge spice fan but I bet these would taste awesome with a sirachia ketchup or a delicious guacamole.

  8. I actually didn't mind the taste of cauliflower pizza, and I've also tried cheesy cauliflower tots, which were really good, but the thing that gets me about it is the smell. It literally makes my whole kitchen smell like cauliflower for a week, which I just cannot handle. Haha, maybe it's just me?!

  9. The sweet potato and zucchini fritters look soo good! My mom tried making cauliflower rice this week and it was just okay, haha. We weren't fans of the cauliflower pizza crust either!

  12. Mmm, we love avocado chicken salad! We throw some grapes in there, too and it's so good! Very intrigued by the squash ravioli, you will have to let us know how it goes!

  13. A big , fat YES to cauliflower rice! It is SO GOOD, and I don't usually like cauliflower at all. I started eating/making it my last Whole30 round, and I've added it into so many things since then.

  14. So glad I am not the only one who had an issue with cauliflower pizza. First of all mine didn't turn out AT ALL, it was so frustrating. I ended up at Little Cesar's for a $5 pizza at 8 pm. Hahah the rice sounds interesting, I have been enjoying mashed cauliflower, it may not be as good as potatoes but it really isn't bad!

  23. We've done the cauli fried rice and the squash lasagna type roll ups! The "rice" was a total hit, but the roll ups were kind of a fail. I don't have a mandolin for slicing the squash long ways, so I thought I could use a peeler and it just..didn't work. It was too thin, broke off, etc. So we just used the slices and made a stir fry, more or less. It was still good, just definitely not as pretty LOL

  25. i love rice like more than life, so i was kind of 'meh' on the cauliflower rice. it was okay, it wasn't bad, and if you are trying not to eat rice, it's a great substitute. i like quinoa more, but of course that's super carb heavy. i haven't made anything else with cauliflower (like mashed 'potato' or a pizza crust) though. anyway. it's worth a try, i don't think it's as amazing as the internet goes on about it!

    i've seen that ravioli around but it does look a wee bit too involved for my lazy self. it's such a great GF option though, i love ravioli but haven't had it in years. let me know how it goes!

    we make the avo chicken salad (or something like it) a lot, KC eats it in pita bread, and also I add chickpeas to the food processor with the avo. it means less meat and beans are good and yummy.

  31. I've seen that "ravioli" floating around and want to try it too. We definitely try to limit evening carbs in our house so that looks like a perfect tasty dinner. We are huge cauliflower fans... I loved it as a pizza crust, as rice and as a substitute for potatoes in soup. I hope you enjoy the rice :)
